Want to achieve an incredibly tender, flavorful steak? Whether you use a skillet, barbecue, or even a pizza oven, this method delivers mouthwatering results. In just four minutes, you’ll have juicy beef medallions ready to enjoy—a simple yet impressive dish for any summer gathering.
Ingredients
- 4 beef medallions (top sirloin), about 3 cm (1 1/4 inches) thick (see note)
- 30 ml (2 tbsp) vegetable oil
Instructions
- Preheat the skillet – Place a cast-iron skillet inside your pizza oven and set it to MAX heat. Let it preheat for 20 minutes with the door closed.
- Season the steak – While the skillet heats up, coat the medallions with oil and season generously with salt and pepper.
- Sear to perfection – Carefully place the steaks in the hot skillet (watch out for splatters). Close the oven door and cook for 4 minutes, flipping halfway through, for a rare finish. Adjust the cooking time for your preferred doneness.
- Rest & serve – Transfer the steaks to a clean plate and let them rest for 5 minutes. Pair with a fresh green salad or creamy mashed potatoes for a complete meal.
