These homemade waffles are crispy and light, perfect for a delicious breakfast or snack. They need to be prepared the night before to allow the batter to rise. They’re delightful served simply with maple syrup or a savory topping.
Ingredients
- 300 g (2 cups) all-purpose unbleached flour
- 15 ml (1 tbsp) sugar
- 5 ml (1 tsp) instant yeast
- 2.5 ml (1/2 tsp) salt
- 2 eggs
- 430 ml (1 3/4 cups) warm milk
- 75 g (1/3 cup) unsalted butter, melted
Instructions
- In a bowl, mix the flour, sugar, yeast, and salt.
- In another large bowl, whisk the eggs. Add the warm milk and melted butter, then incorporate the flour mixture. Stir until the batter is smooth. Cover and refrigerate for 8 hours, or up to 24 hours maximum.
- Preheat the waffle iron. Pour about 60 ml (1/4 cup) of batter into each section. Close the iron and cook for 4 to 5 minutes, or until the waffles are golden brown. Keep warm and repeat with the remaining batter.
- Serve with maple syrup or any sweet or savory topping.

If you’re making the batter the same morning, let it rise in a warm, humid place for 1 hour, until it doubles in size. To reheat frozen waffles, place them in the oven at 150°C (300°F) for 8 to 10 minutes, or use a toaster set to medium heat for a crispier result.
