For a quick and flavorful take on pizza, these Greek-style pitas make the perfect base—thick and fluffy enough to hold a generous topping of seasoned ground beef and diced bell peppers. Before being spread with a tangy lemon-infused Greek yogurt sauce, the pitas are brushed with a garlicky chili oil and lightly toasted in the oven. A simple and delicious recipe, perfect for a quick meal!
Ingredients
Topping
- 225 g (1/2 lb) lean ground beef
- 15 ml (1 tbsp) olive oil
- 1 onion, thinly sliced
- 1 red bell pepper, seeded and diced
- 15 ml (1 tbsp) chili seasoning
- 2.5 ml (1/2 tsp) ground cumin
- Salt and pepper, to taste
Pizzas
- 30 ml (2 tbsp) olive oil
- 1 garlic clove, finely chopped
- 1 ml (1/4 tsp) crushed red pepper flakes
- 4 thick Greek-style pitas
- 250 ml (1 cup) plain high-protein Greek yogurt, at room temperature
- Finely grated zest of 1 lemon
- 15 ml (1 tbsp) lemon juice
- 30 ml (2 tbsp) chopped flat-leaf parsley
Instructions
Topping
- Preheat the oven to 200°C (400°F).
- In a skillet over medium-high heat, cook the ground beef in olive oil for about 4 minutes, breaking it apart with a wooden spoon.
- Add the onion, bell pepper, chili seasoning, and cumin. Continue cooking for another 5 minutes, stirring occasionally, until the vegetables are tender. Season with salt and pepper. Set aside.
Pizzas
- In a small bowl, mix the olive oil, garlic, and crushed red pepper flakes.
- Place the pitas on a parchment-lined baking sheet and brush them with the flavored oil. Bake for 6 minutes.
- Meanwhile, mix the lemon zest and juice into the Greek yogurt. Season with salt and pepper.
- Spread the yogurt sauce over the pitas, then top with the beef mixture. Sprinkle with chopped parsley.
- Slice into wedges and serve immediately.
