Have you ever tried cluster granola? These are delicious clusters of crunchy toasted oats and peanuts. To create large chunks, an egg white is added to help the ingredients stick together. This granola pairs perfectly with Greek yogurt and fresh berries coated in jam.
Ingredients
- Granola
- 60 ml (1/4 cup) vegetable oil
- 60 ml (1/4 cup) molasses
- 55 g (1/4 cup) brown sugar
- 1 egg white
- 300 g (3 cups) large rolled oats
- 150 g (1 cup) salted roasted peanuts
- Topping
- 270 g (2 cups) mixed fresh berries (blueberries, blackberries, raspberries)
- 90 ml (6 tbsp) raspberry or mixed berry jam
- 500 ml (2 cups) 0% plain Greek yogurt
Instructions
- Granola
- Preheat the oven to 180 °C (350 °F) and position the rack in the center. Line a baking sheet with parchment paper or a silicone mat.
- In a large bowl, whisk together the oil, molasses, brown sugar, and egg white. Add the oats and peanuts, mixing well until the oats are fully coated. Spread the mixture evenly on the baking sheet.
- Bake for 15 minutes, then carefully flip the granola. Continue baking for another 5 to 10 minutes until the granola is caramelized. Let it cool completely, about 1 hour. The granola should form clusters. Break it into smaller pieces if necessary. The granola keeps for up to 1 month in an airtight container at room temperature.
- Assembly
- For each serving, mix 45 g (1/3 cup) of fresh berries with 15 ml (1 tbsp) of jam. Place a small amount of berries in the bottom of a glass or jar.
- Add 75 ml (1/3 cup) of Greek yogurt, then top with the remaining berries and granola to taste.
